• Gluten Free Penne Rigate

Paolo's Gluten Free Pasta Penne Rigate #12 (8.8 Oz.)

One 35-ounce can Italian plum tomatoes (preferably Paolos Gourmet ) with their liquid

1 pound penne Paolos Gourmet

1/4 cup extra-virgin olive oil

10 cloves garlic, peeled

Crushed hot red pepper

1/4 cup vodka

1/2 cup heavy cream

2 tablespoons unsalted butter or olive oil for finishing the sauce, if you like

2 to 3 tablespoons chopped fresh Italian parsley

3/4 cup freshly grated Parmigiano-Reggiano, plus more for passing if you like

Begin cooking pasta to al dente stage according to package instructions.While pasta is cooking, heat oil in large skillet over medium heat. Add chile flakes and grated garlic, cook, stirring constantly, until fragrant, 1-2 minutes.

Add tomatoes and vodka, bring to a simmer and cook, stirring occasionally for 5-10 minutes.

Stir in cream, parmesan cheese, plus ΒΌ cup of pasta water until smooth. If needed, add more pasta water a little at a time until smooth. Salt and pepper to taste.

Drain pasta, add to pan with sauce and toss until coated.

Serve with fresh parsley and grated parmesan
